Origin

Named for the 19th century Italian opera composer, Gioachino Antonio Rossini. This is one of the most popular Bellini variants in Venice.

Steps: Rossini (Difford's)

Muddle strawberries in the base of shaker.

Press gently to release oils — don't pulverize. You want flavor, not bitterness.

Add 1 min

Add liqueur, shake with ice and fine strain into chilled glass.

Add ingredients in order — heaviest first, lightest last.

Top 1 min

Top with prosecco and gently stir.

Top gently to preserve carbonation. Never stir vigorously after adding soda.
